Roasted Pueblo Chile Jam & Honey Goat Cheese Hand Pies 🌶️

Flaky pastry pockets filled with sweet, smoky Piñon Pantry’s Roasted Pueblo Chile Jam and tangy honey goat cheese, baked golden and drizzled with chile-infused honey. A perfect mix of savory, sweet, and spicy!

🧈 Ingredients

For the Pastry

  • 2 1/4 cups all-purpose flour

  • 1 tbsp granulated sugar

  • 1/2 tsp salt

  • 1 cup (2 sticks) cold unsalted butter, cubed

  • 1/3 cup ice water (plus more if needed)

For the Filling

For Assembly

  • 1 egg + 1 tbsp water (egg wash)

  • Turbinado sugar or flaky salt, for topping

🧑‍🍳 Instructions

🔹 Step 1: Make the Dough

  1. In a food processor or large bowl, mix flour, sugar, and salt.

  2. Add butter and pulse or cut in until pea-sized crumbs form.

  3. Slowly add ice water until dough just holds together.

  4. Divide in two discs, wrap, and chill 30 min.

🔹 Step 2: Make the Filling

  1. In a small bowl, mix goat cheese, honey, and cumin until smooth.

  2. Spoon into a piping bag or zip-top bag for easy filling (optional).

🔹 Step 3: Assemble Hand Pies

  1. Roll out dough to 1/8” thick. Cut into 4” rounds or squares.

  2. Spoon 1 tsp goat cheese mixture and 1 tsp chile jam onto each round.

  3. Fold over into half-moon or rectangle and crimp edges with a fork.

  4. Chill assembled pies 15 min (helps prevent leaks).

  5. Brush with egg wash and sprinkle with sugar or salt.

🔹 Step 4: Bake

  1. Bake at 375°F (190°C) for 20–25 minutes until golden and crisp.

  2. Cool 5–10 minutes before serving.

🔹 Optional Drizzle

Mix honey with Piñon Pantry’s Roasted Pueblo Chile Jam or a pinch of chile powder. Warm slightly and drizzle over the pies just before serving.
